Shrimp Scampi
serves 4
Ingredients
1 lb linguine, orzo, or rice, cooked
1 lbs large shrimp (about 32), peeled and deveined
6 T unsalted butter
5 T olive oil
9 cl garlic, minced
1/4 C parsley, chopped
lemon zest
1/2 C lemon juice
1/2 ea lemon, sliced thin in half-rounds
1/4 t red pepper flakes
Instructions
Heat the garlic in the butter and oil briefly, then sauté the shrimp with salt and pepper until pink.
Remove from the heat, then add the parsley, lemon zest, lemon juice, lemon slices and red pepper flakes and toss.
Plate the pasta or rice, top with the shrimp mixture, and serve hot.
